Honing is used to maintain, straighten, and realign the sharp edge of your knife, which can bend and warp over time and with frequent use. This differs from sharpening, which removes tiny fibers along the edge of your blade, essentially shaving it to create a new edge. Honing can be done much more frequently than sharpening—up to every time you use your knife.
Our Honing Steel features a finely textured grit and a comfortable black POM handle with a built-in angle guide to help achieve universal angles for both Eastern (15 degrees) and Western (20 degrees) knives.
The Honing Steel itself is made of Tungsten Steel, which is often compared to natural diamond and is prized for its wear resistance, strength, and durability. The Honing Steel can be used on all knives without a serrated edge.
What does a honing steel do?
Honing steel’s help correct the edge of the blade. Rather than sharpening and creating a new edge, when you hone a blade, the edge is pouched back towards the center.
Can I use the Honing Steel with all of my knives?
The Honing Steel can be used with any knives except for serrated blades. Over time, we recommend having your knives sharpened to create a new edge for the blade.
How do I clean the Honing Steel?
The honing steel should not be put in the dishwasher or submerged under water. Keep the steel clean and free of any metal residue by wiping it with a damp towel from time to time.
